MIDWESTERN CUISINE

  • Most Midwestern meals are culture based
  • A surge of immigration began and people from Germany, Scandinavia, Ireland moved here
  • Many of their meals impacted the type of food served here
  • New wave of immigrants adopted many regional dishes
  • Adding their own tastes and fusing them with their own and traditional meals

HOT DISH

  • Hot dish is an all in one meal, known for its conveince and ability to feed many people
  • Invented for a fast way to make dinner for a large family or church event
  • Common types of hot dish are: tuna with noodles or tater tot casserole
  • Hot dish meals are often followed by a desert called bars
  • They are cookies baked in a casserole dish and then cut into rectangular bars

LOOSE MEAT SANDWHICH

  • Made of seasoned loose ground beef on a hamburger bun
  • It's close cousin is the Sloppy Joe
  • Cooked in tomato sauce or ketchup

CINCINNATI CHILI

  • Includes cinnamon, cloves, allspice, and even chocolate
  • Have different names and numbers for each types of chili
  • Cincinnati chili can even be served over fries, or as a cheese coney
  • Distinct chili menu is fairly standard for buying chili in Cincinnati

CORNISH PASTRY OR MEAT PIES

  • Originated in Cornwall, England
  • Brought by miners who worked in the UP of Michigan
  • Conveinant food consists of pastry pocket filled with meat and vegetables
  • Perfect meal for miners during lunch

PIEROGI

  • Dumplings similar to ravioli or pot stickers
  • Typically filled with potato, sauerkraut, ground meat, and cheese
  • National dish of Poland
  • Northeast and Midwest are primary areas for this dish

GOULASH

  • Diverged significantly from the traditional meal
  • American version contains beef and paprika, macaroni, tomato sauce and vegetables
  • American goulash can be baked life casserole
  • Especially popular in Cleveland, Ohio

LEFSE AND LUTEFISK

  • Originated in Norway
  • Lefse is a type of flatbread
  • Lutefisk is fish
  • Lutefisk is usually eaten during cold winters, the curing process preserves the fish
  • Lutefisk and lefse are a typical Christmas meal for Americans of Norwegian descent

FARMERS MARKET

  • Farmers Markets are a place where you can see friends and get fresh produce
  • Known for having best and freshest ingredients
  • Great place to get many fresh vegetables and fruits

  • Hunting and fishing is very appreciated
  • Many families enjoy hunting snd fishing trips all year
  • Many service or hunting clubs have wild game feeds
  • Wild game feeds are where one can sample almost any type of wild game

  • Often wild fish or game would be served with mushrooms
  • Best kept secrets in Minnesota is the spot where morels grow
  • State mushroom is crinkle-capped mushroom

NORTH AMERICAN NATIVE FRUIT

  • Blueberries, cranberries, and concord berries are 3 fruits native to North America
  • Blueberries are used to make delicious pies, breads, and desserts

WILD RICE

  • Part of winter for native Americans was harvesting wild rice
  • Native American would go out into the rice growing lake in a canoe
  • With one stick they would bend the rice stalk over and beat the stalk

  • One of the most American foods
  • When commercially packed yeast was introduced to America sourdough disappeared
  • Sourdough was used everyday to make bread

CORN

  • Before settlers from the Midwest dug their well they would plant corn
  • If times were bad corn might be all there was to eat
  • Middle or late summer people would take turns having corn on the cob
