American Express wants every stay to be consistent. The hotel staff must tell you all about the benefits you are receiving

You must also get a Welcome letter detailing your benefits, and a Survey form to get your feedback at the end of the stay. You must receive both of these at check-in

The FHR breakfast benefit is for 2 people. Some hotel amenities are also for 2 people. For both of these types of benefits, even if you travel alone, the 2 person benefit applies

So, if you're traveling alone, and you have a friend in town, invite them for breakfast, or the Dinner for 2 benefit (if that's the FHR amenity at your hotel). American Express will pick up the tab!

You can book up to 3 rooms for a single Fine Hotels and Resorts stay.

Any Amex product with the American Express logo on it works. If they have a name on them, then it must be the name of the person who booked, but Amex gift cards work too.

Surprisingly, Travelers Checks can all be used to settle your bill!

You MUST pay the whole bill with Amex products though.

You must book your stay through American Express Platinum Travel to get the Fine Hotels and Resorts benefits

You can't walk up to reception and check-in and get FHR benefits.

What you can do though is call American Express travel using the number on the back of your card (or get the hotel staff to do it if your not in your home country), and book a room with Amex Platinum Travel and then immediately check-in once the call is over.
