Niche Markets are businesses designed to fill a unique or unmet need
Some Examples?
Naturopathic treatments for animals, Soap that removes chlorine from hair, Vegan cupcakes baked with all natural locally sourced ingredients.

Look around and find a service or product you think would be useful.
Design a concept
For example, if you want to open a bakery, look to see what options exist and try to tweak your product to fit any gaps in availability
Other bakeries might offer cakes and pastries So what can you do to stand out?
Gluten free? Ethnic focused recipes? Locally sourced ingredients? Storefront atmosphere?
