Nutrition Facts of Cabbage

Cabbage is an excellent source of vitamin K, vitamin C and vitamin B6. It is also a very good source of manganese, dietary fiber, potassium, vitamin B1, folate and copper. Additionally, cabbage is a good source of choline, phosphorus, vitamin B2, magnesium, calcium, selenium, iron, pantothenic acid, protein and niacin.

Cabbage Soup

Cabbage soup is a traditional staple in Eastern European cuisines. Although it has long been thought of as a subsistence food, it actually offers a range of benefits in addition to its low cost. Cabbage is an extremely healthy food, and there are many available cabbage soup recipes available that are extremely low in calories, but fill you up enough to deter you from eating higher calorie foods.

CABBAGE SOUP RECIPE

  • 2 large yellow or white onions
  • 1 or 2 garlic cloves
  • 2 green peppers
  • 1 or 2 cans of tomatoes (diced or whole)
  • 3 carrots
  • 1 container (10 oz. or so) mushrooms
  • 1 bunch of celery
  • Half a head of cabbage
  • 1 48oz can low sodium v8 juice (optional)
  • One pack of my Cabbage Soup Diet Seasoning

Day One

Fruit: Eat all of the fruit you want (except banana). Eat only your soup and the fruit for the first day.

For drinks all week: unsweetened tea or coffee, 100% cranberry juice and water.

Day Two

Vegetables: Eat until you are stuffed will all fresh, raw or cooked vegetables of
your choice. Try to eat leafy green vegetables and stay away from dry beans, peas
and corn. Eat all the vegetables you want along with your soup. At dinner, reward
yourself with a big baked potato with (a little bit of) butter. Do not eat fruit today.

Day Three

Mix Days One and Two: Eat all the soup, fruits and vegetables you want. No Baked
Potato.

Day Four

Bananas and Skim Milk: Eat as many as eight bananas and drink as many glasses
of skim milk as you would like on this day, along with your soup. This day is
supposed to lessen your desire for sweets.

Day Five

Beef and Tomatoes: You can eat from ten to twenty ounces of beef and up to six
fresh tomatoes. Drink at least 6 to 8 glasses of water this day to wash the uric acid
from your body. Eat your soup at least once this day. You may eat broiled or
baked chicken instead of beef (but absolutely no skin-on chicken). If you prefer,
you can substitute broiled fish for the beef on one of the beef days (but not both).

Day Six

Beef and Vegetables: Eat to your heart's content of beef and vegetables this day.
You can even have 2 or 3 steaks if you like, with leafy green vegetables. No Baked
Potato. Eat your soup at least once.

Day Seven

Brown rice, unsweetened fruit juices and vegetables: Again stuff, stuff, stuff
yourself. Be sure to eat your soup at least once this day.

One of my cousin had tried the Cabbage Soup Diet and here's what she has to say about it:

"If you are looking to loose weight quickly the Cabbage soup is the answer. It works, it's quick and great for pre-diet. This is great for the start of a real diet/eating plan because sometimes you just need a jumpstart, a boost of confidence on the scale. I even lost 7-10 lbs., my blotted gut got flat and I really like it for pre-diet."

PROS

  • Fast weight loss
  • The change from some of our normally junky eating habits can be beneficial
  • Vegetable from the Brassica family (such as cabbage , broccoli, cauliflower) have been found to aid preventing cancer.
  • Many say they enjoy eating the soup.

CONS

  • Some complain that the Cabbage Soup a little too bland.
  • Be prepared for gas...
  • Requires will power.
  • Lacks good nutrition.
  • High in salt.
  • Not a long-term answer.
