kinds of cakes
cakes are classified into two groups shortened cakes and unshortened sometimes called foam cakes. shortened cakes contain fat they are tender,moist, and velvety. unshorted cakes are leveled by air and steam. the main difference is angel food cakes just contain just egg whites while sponge cakes have the whole egg.

all cakes contain flour,eggs,sugar,liquid,and salt. flour gives structure to the cake,sugar gives sweetness to cakes.
