what is curry?
Curry is the English name adopted in the West for a mixture of spices, originally marketed in England and the Netherlands, based on mixtures of spices (ginger, cloves, saffron, coriander, etc.), used in India for braised dishes with sauce, likewise refers to the dishes

why did i choose this dish?I chose this dish, because in my house we always try new dishes and this is one of the ones we loved the most.

ingredients

  • Chicken breast
  • Spring onion 1
  • Garlic cloves 1
  • ground curry 5g
  • ground turmeric 2 g
  • ground cumin 2 g
  • Crushed tomato 45ml
  • Salt 2 g
  • ground black pepper
  • Coconut milk 200ml
  • Extra virgin olive oil
  • fresh cilantro or parsley

  • Extra virgin olive oil
  • fresh cilantro or parsley

The first thing is to have all the ingredients ready. Cut the chicken into bite-size pieces. Chop the spring onion and very finely chop the garlic clove, the ginger and the chilli without the seeds, if we use it. If we use frozen chopped onion we will save even more time.

Process
Heat a little oil in a frying pan or casserole and fry the spring onion for 2 minutes. Add the garlic, ginger and chilli pepper, stir a few times and add the tomato. After 1 minute, add all the spices and stir well.

Add the chicken, season and mix. Cook over high heat for a few minutes, until golden all over. Cover with coconut milk or cream and allow to reduce slightly. Serve with chopped fresh parsley or cilantro.
