A car starting shows equilibrium when you start your car up, you're starting at a reactant as you accelerate and when it shifts so does the equilibrium until you get to the speed you want, it shifts back down.
When you put water with table salt, you add too much salt to the water that all of the salt cannot dissolve. You think nothing is happening in this saturated solution, at the molecular level, there is constant activity, with sodium chloride dissolving and sodium chloride precipitating constantly.
