HANDLING THE DOUGH

EFFECTS OF HANDLING

  • The way the dough is handled impacts the quality
  • Too much flour or liquid can toughening of the pastry
  • If over handled dough will toughen

OVER HANDLING

  • Over handling can cause it to become tough
  • It can also over develop the gluten causing tough dough
  • Make sure to handle dough gently and as little as possible

GUIDELINES TO MIXING DOUGH

  • Be sure not to over mix
  • Don't be too rough with the rolling pin
  • Be careful not to stretch the dough when fitting it in a pie plate
