How to make baked eggs with leeks

Ingredients

  • 1 Tbs of butter, plus more for greasing
  • 1/2 lb small leeks thinly slice
  • 5-6 Tbs heavy whipping cream

Ingredients cont.

  • Freshly grated nutmeg
  • 4 eggs
  • Salt and freshly ground black pepper

Preheat oven to 375°

Generously butter the base and sides of four ramekins

Melt the butter in a medium skillet over a medium heat

Cut and wash the leeks thoroughly

stir frequently until softened, not browned

Add 3 Tbs of the heavy cream, cook gently for five minutes

Add salt, pepper, and nutmeg

Arrange the ramekins in a small roasting pan

divide leeks among them

Break an egg into each ramekin

Add 1-2 tsp of the remaining cream over each egg and season lightly

Add boiling water into the baking dish to come halfway up the ramekins

Place into oven carefully

cook for roughly 10 minutes

until the whites are set and the yolks are still soft

Take out of the oven carefully
