THE HISTORY OF THE ONIGIRI

ONI-STORI

  • Was called Tonjiki in 794-1185 AD. It was pure rice balls that time
  • 1688-1704 AD. Seaweed became more accessible to the people.

  • Makizushi "Rolled Sushi"
  • Rolled rice combined with seafood, vegetables and sometimes tropical fruits.
  • Wrapped in Nori (seaweed)

  • Second century AD, Southeast Asia
  • To keep meat fresh without refrigeration
  • Idea spread to China then Japan
  • Japanese would ferment their cured-fish-and-rice sushi with rice wine or sake
  • Ten centuries later, the people started adding vinegar instead of waiting months for the sushi to be ready
  • 1820 AD, chefs started using raw fish in their sushi known as Edo-style Sushi

  • Rice pounded into paste and molded into the desired shape
