VIETNAMESE EGG COFFEE

  • There was a shortage of fresh milk in Vietnam during the French War, most Vietnamese would line the bottom of the cup with condensed milk and pour the coffee on top. But lacking milk, Nguyen Giang worked at the Metropole Hotel , Ha Noi as a bartender whisked in egg as a substitute.
  • Egg coffee began in the North of Vietnam, but due to its apparent tourist demand, it can be found at many coffeeshops in the South and elsewhere, hot or iced coffee is added.
