Secrets to Caramelized Hazelnuts

Step 1: Roast the hazelnuts just until they are fragrant and light golden brown. Starting with raw nuts will ensure fresher tasting results.

Step 2: Place roasted nuts in a clean cloth

and rub off the skin

Some skin may be stubborn

you can remove the remaining with a knife

Step 3: Mise en place

butter and salt ready

Step 4: Sugar in stainless steel pot

I usually eye it but you can use the ratio of 5-6oz sugar to 8oz nuts

Step 5: Add water to make a wet sand

clean sugar off the walls of the pot

Step 6: Put the sugar mixture on Medium heat

use wet brush along walls if sugar develops

You will notice the sugar getting thicker

at this stage you will need to keep a closer eye on the color

Sugar will start to caramelize

you can start checking the color on a white plate

As the color gets deeper in color,

you will notice the bubbles becoming smaller and disappearing, even smoking

Visually see the change in color on the plate. I prefer a darker caramel which tastes less sweet and more intense caramel flavor

Step 7: Add Roasted nuts, butter & salt to taste. Make sure not to get any sugar on your skin. When adding the butter the mixture will bubble.

Step 8: pour mixture onto a parchment lined sheetpan

allow to cool, break into chunks and put in food processor to grind

Finished Product.. Enjoy!
