THERE IS NOT MUCH AGRICULTURE BECAUSE OF THEIR DESSERT SUSTAINS VERY LITTLE VEGITATION.

WHAT THEY EAT

Food plays and important role in the Kuwaiti culture. There is no such thing as Kuwaiti restaurant anywhere in the world—Kuwaiti food can only be eaten at Kuwaiti homes. the most popular dish is the "Machboos", which is chicken, beef or fish over a specially spiced rice.

Machboos (Kuwaiti Rice Dish)

  • Ingredients 3 cups basmati rice 1/4 cup dried split peas 1/2 tsp saffron 1/4 cup rose-water
  • For The Chicken 2 pounds chicken 1 onion cut into quarters 4-6 whole cloves 1 cinnamon stick 5 cardamom pods 1 dried lime 2-4 bay leaves 1/4 tsp turmeric 1 tsp salt 1/4 cup canola oil
  • For The Stuffing 2 tbsp canola oil 2 onions chopped 1tsp all spice 1/4 tsp black pepper 1/2 tsp dried lime 1/4 cup golden raisins Salt
  • For The Sauce 4 tomatoes (diced) 3 garlic cloves 1/2 cup water 1 tsp salt 1/4 tsp black pepper 1/2 tsp cayenne (optional) 2 Tbsp tomato paste
  • Directions wash the rise really well and soak for about an hour. wash the split peas place the saffron in a small bowl and add the rose-water to it and set aside. For the chicken:- clean the chien and add to large pot cover with water add the onions , cloves, cinnamon, cardamom, dried lime , bay leaves, turmeric and salt. Cover the pot and cook until the chicken is cooked. When chicken is done take out of the stock and set aside, drain the stock and save it to use later. meanwhile place the split peas in a small saucepan and cover with water and cook until tender but not mushy. In a large skillet add oil and saute the onions until they become golden and translucent. Wash the raisins and add to onions , add split peas, all spice, black pepper , dried lime and salt cook for a few mins set aside. For the Sauce: saute the garlic and diced tomatoes until tender, add water, salt, pepper, and cayenne and paste. cook for 10 mins on med-low heat. in the same skillet used to make the stuffing add oil and fry the chicken for a few mins on each side to make it crispy. In a large pot add the rice and then for each cup of rice add 1.5 cups of the stock cover and cook on low heat. when the rice is halfway done and there is still a little water left add the saffron mixture, mix the rice and recover. when the rice is almost done uncover the rice and create a hole in the middle
