CAT'S EARS
Scientific Name: Hypochaeris radicata
You can eat the young leaves raw or boil them, either way is safe to eat.
The roots can be roasted and mixed with water to make a coffee.
You can find them in sunny fields and can grow as a weed in your backyard.

They are commonly found in sunny fields during late fall and spring.
You can eat the leaves, stem, and flower raw or make a tea.

They have vitamins, iron, and antioxidants, all of which important for health.
