EMPANADAS FRITAS DE QUESO

INGREDIENTS

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons lard
  • 1 cup whole milk

MORE INGREDIENTS

  • 1 egg, well beaten
  • 1 cup queso chanco (or Swiss cheese or Havarti), cut into 1/2-inch cubes

Preparation
1.) Whisk together the flour, salt, baking soda, baking powder, and sugar in a large bowl.

2.) Gently mix the vegetable oil with flour.

3.) Place the milk and water in a saucepan and heat. Stir into dry ingredients. Add more water (1 tablespoon at a time).
4.) Knead the dough, an divide into 16 portions. Roll into a ball and let it sit for 5
minutes.

5.) Grate or finely chop cheese.

6.) Roll each ball of dough into a 6-7 inch diameter circle. Place one ounce of cheese in the center of each dough circle.
7.) Fold dough in half and press hard. Seal and crimp the ends.
8.) Fry until golden brown, and drain them on paper towel.

9.) Empanadas can be kept warm in a 200 degree oven for up to 1 hour before serving.
