COASTAL STATES
Middle and and Northern CA, Oregon, and Washington are part of the coastal states. Each state has a large Asian population which introduces a distinct cuisine and culture.

HAWAII
Hawaii is a chain of 132 islands in the middle of the Pacific Ocean. The mild climate and the volcanic soil provides a good environment to grow tropical crops, but there is limited land and fresh water, so much of the food supply is shipped.

WAGON TRAINS
There is a wrong conception that people who rode wagon trains were poor. In fact, people who rode them were rich. To ride the wagon train, you needed a stout wagon and three yoke of oxen.

RAILROADS
Building railroads across the US brought many Chinese people to America as laborers. Because of that, California has the most diverse agriculture economy in the nation. They raise over 70 kinds of fruit and many varieties of nuts.

FRUITS AND NUTS
Washington and Oregon is known for its fruits and nuts. Strawberries, raspberries, blackberries, sweet cherries, peaches, apricots, plums, walnuts, apples, pears, filberts are grown in the Pacific Northwest.

APLETS, COTLETS
Aplets are a recreation of Turkish Delights, a combination of apples and walnuts while cotlets are apricots with walnuts. They both have been created by two Armenian immigrants.

POTATOES
Idaho grows more potatoes than any state. The volcanic soil is good for growing giant potatoes. Potatoes are indigenious to Peru, but today it is mainly eaten in Germany, England, Ireland and America.

LENTILS
100% of lentils grown in the US are grown in Idaho. Lentils can be traced back to Biblical times and are popular today in the Middle East.

SPAM
Spam is a 100% pure pork and ham product that is very popular in Hawaii to all kinds of diverse groups. Since it does not require refridgeration, it is perfect for islanders such as Hawaiians.

COFFEE AND MACADAMIA NUTS
Macadamia nuts and Kona Coffee grow on Big Island. Hawaii is the only state in Union that grows coffee.

PINEAPPLE
When people think of Hawaii, they think of pineapple. The Dole plantation where pineapples are experimentally grown, is a common tourist stop.

SUGAR CANE
Sugar cane is the main agricultural crop of Hawaii.

POI
Poi is a traditional starchy Hawaii food. It is made by pounding the cooked stem of a taro plant until it becomes paste. It is then eaten scooping it from the bowl by your fingers.

POG
Pog stands for Pineapple, Orange, and Guava. It is a fruit drink often served with spear of fresh pineapple, thin strip of sugar cane, or syrup.

LUAU
Luau is a feast with a pig wrapped in leaves and buried in a pit roasting. It is often accompanied with traditional dancing and singing and takes place at night.
