QUALITY PIE NEEDS..

  • High quality pie needs to be tender and flaky.
  • Effected my the amount of gluten is the tenderness.
  • Tender pastry will cut easier.
  • For a pie to be flaky the gluten needs to be in layers.
  • If a pie is flaky you can see the layers in it.

A pie needs to also be slightly crispy on top, or browned.

  • Also needs to be not too runny or too firm.
