Guard cells control the opening and closing of the stomates, they regulate transpiration

Water enters the plant through the roots, and then goes into the xylem then water travel through the stem and then to the leaves. The water exits out if the stomates in the leaves which are controlled by the guard cells. The water exits in the from of water vapor.
