I believe that the director made these changes because all of the omitted characters were not essential to the plot. You'll notice throughout the book that many situations occur which seem to be irrelevant.

When writing a book, in order to engage a reader and induce a connection between them and the characters, your book must be relatable. Harper Lee introduces characters and situations that, though seemingly irrelevant and unimportant, are essential to the introduction of new morals and messages.

The director likely ,add the decisions to omit these scenes because, again, they aren't essential to the overall plot and the movie would've been unnecessarily long.

The director likely made this decision because it added more suspense and excitement to witness the tension between the men, rather then Atticus relaying the events to the children later.
