How to make mayonnaise

A step by step tutorial

Beat the egg yolk

  • Mayonnaise is what's called an emulsion
  • You can make mayonnaise from a single egg yolk

Add a drop of lemon to your beaten egg yolk

  • This helps make the emulsion of oil and egg yolk more stable
  • In addition to that, it provides a "lemony" flavor
  • The acid helps make the egg yolk absorb more fat

while whisking, gradually add oil

  • It is important to add your oil slowly
  • Your mayonnaise won't break 
  • You can use different types of oil for your mayo's flavor
  • Such as Walnut Oil, Avocado Oil, Olive Oil or Vege Oil

Keep whisking

  • You're still slowly drizzling the oil 
  • You'll notice it will slowly thicken
  • When you get to that point, you can start adding your oil fast

When the mixture is starting to thicken, you can add more lemon

  • This will moisten the mixture and make it smoother
  • It will improve the emulsification
  • At this point, it's starting to look like a mayonnaise

Your arm is starting to hurt

  • Then you're doing it right
  • If not.. Then you have failed
  • The thickened mixture makes it hard to whisk

When the mixture is starting to thicken, you can add more lemon

  • This will moisten the mixture and make it smoother
  • It will improve the emulsification
  • At this point, it's starting to look like a mayonnaise

For every yolk is a cup of oil only!!

  • If you try to add more than this then your emulsion will break
  • No matter how slowly you drip your oil

YOU HAVE HOMEMADE MAYONNAISE!!

  • If you're not happy with the consistency then add more lemon
  • Adjust taste by adding a pinch of salt and pepper
  • You can even put sriracha, garlic (aioli), and many more
  • Feel free to put your mayonnaise in any food you want

  • Blender
  • Kitchen Aid
  • Immersion blender
