Pancit Canton Recipe: 5 Servings
- 1 Ib tail-off shrimp * 3 tablespoons oil
- 3 cloves garlic * 1 onion
- 1 head green cabbage * 2 large carrots
- 8 ounces dry pancit canton noodles
- 3 cups chicken stock * 2 tbsp. soy sauce
- 1 tablespoon fish sauce
- 1 tsp. calamansi (or lime) juice to taste
- 1 tablespoon sliced green onions
Chef Umoette and I will be in charge of the entrees, Pancit Canton. Pancit Canton is similar to your regular Lo Mein, but it is specially served during birthdays or special occasions to symbolize a long, happy life. There are 100 reservations of guests reserved at our Reservoir. Chef Umoette and I, Chef Dang, will need to prepare and gather all of the ingredients enough to make 100 servings of Pancit Canton. The things that we will need to figure out is:
* The ratio of the ingredients for each five servings to a hundred.
* The cost of each ingredient for 100 servings.
* The conversion of the ingredients and how many # of each ingredient we need in order to make 100 servings.
* The time it will take to make 100 servings.
